I would probably skip San Gimignano. September is a very busy month, and when it's busy they turn cars away on the approach road. We parked outside the city and hiked in. It's on a pretty steep hill, so I don't know if you'd want to bike in.
I agree about San Gim and we came in following a ridge from the other side, though the final hill is what it is (welcome to Tuscany, with so many towns having "Monte" in the name), but Street View in the UK drive all day and certainly (only met it once near Venice) it was at midday. At the end of the day (to use the expression) it gives you a clue.

I also agree about San Gim as well as the suggestion of Abbazia di Monte Oliveto Maggiore, although the abbey closes for a couple of hours in the middle of the day.

We've not eaten here, Ristorante La Torre at the entrance to the Abbey, but it looked interesting, we found https://www.piccolohotelsanvalentino...istorante.html this to be very very good and just over the road.
