I hope this is only for one person because you aren't going to get a very large place for that price, which is just under 900 euro a month. That is a low price for typical vacation rentals, so I think it might work better if you went through some French portals, do you know French? like maybe vacances.seloger.com or www.papvacances.fr
In any case, homelidays has some rentals in southern France and a couple that fit that price range (which isn't much out of their whole inventory, but is something). Here is one

I think so, unless you just want a basic closet. That Pebbles agency looks nice but those are luxury places, I think the cheapest is about $2500 a month.
Airbnb is a good idea, so many people use that, they have about 6 around $900 or less a month in Nice, which are kind of depressing, but are there. One was 10 m2, which is smaller than many simple hotel rooms I've had.
