Many vegetables are high in purines, legumes, as you mention, included.

There is an abundance of newer research that says that the purines in veggies aren't going to adversely affect a person's uric acid levels, and that it is meat in particular that is the worst, with organ meats being particularly bad.

I'm sure there are many who will disagree, and indeed "triggers" vary from person to person.

We eat meat in moderation, red meat rarely, organ meat, never.

We're aware of a very long list of no-no's, and find that moderation is the key, and he includes some alcohol and he tolerates it.

We don't want to obsess, we just want to avoid the few things that the doctor says he must avoid, and that is the organ meats.

The rest of the stuff we will enjoy! We're looking forward to it.

Oh, well, my father has...and a wealth of people here in Spain. Even Phillip II died from gout (we call it "gota&quot, so it's a very well known condition here in Spain centuries ago
But I don't believe the quantity of liver or brains (or that kind of foods) that a sauce may contain do him any harm. It's all about quantity...if he eats shrimps every day, finally he will have an attack but I don't think so for an occasional encounter

Reading this thread I'm becoming convinced that your husband will be perfectly safe eating most everything he is served in Italy..in moderation.
Taking his proper medication, practicing "grazing" and moderation, not eating too late in the evening, and eating less than full portions..he will be fine and gout-less IMHO. Enjoy Italia...it is heaven on earth!
