You can do long-term rentals on Airbnb, anything over 28 days is considered "long-term" and different rules apply. Some hosts are happy to give substantial discounts for month+ stays and if done through the site you'll be protected by their rules & guarantees. You'll find the information on the website, enter "long-term" in the "help" drop down, upper right. One advantage would be the ability to cancel if it turns out not suitable for any reason.
Or maybe I misunderstood and you want nothing to do with Airbnb, period. If so, sorry.

I don't have any personal experience but know a few websites for longer term rentals. You know Spanish well, I presume, and filter through looking for rentals versus purchase, and type of property (house vs. apartment and number of rooms) and piso, apartamento etc lingo.
here is one
https://www.idealista.com/
eg a 1 BR in Malasana area for 950 euro a month on there
https://www.idealista.com/inmueble/436268/
this website is a little funkier, with tricky filters, but here is one for example in the Chueca area for around 700 euro It's sort of similar to PAP in France (online rental ads).

I find that many (oh, god, she's going to say it again...) Airbnb owners rent their accommodations through several agencies & websites, including their own. I've just rented an apartment that was listed on Airbnb and they also have their own site. I paid on the Infernal Site, because it's easy and now we correspond using our private emails and I need not use you-know-who again.
It seems a bit rigid to me to not at least explore the Infernal Site as you may very well find a place for which you can either continue there, move to alternate listing they may have or to private communication. Often there'll be a clue in the Infernal listing on how to find them privately, the name of an apartment, for instance, which you can google. Even when I won't do business with a particular website I certainly don't feel I taint my computer or brain by using it for research.

Are there any classifieds in online papers? Not sure if they all do, but some online newspapers include a classifieds section. But now that Blackstone has become the biggest fully private real estate owner in the country, they might have an apartment or two to rent out.

Thank you all, but that is why I asked for personal experience. There are many resources, but I was hopeful to find one that people actually used.
Right now the one site we like is called Spotahome, but we have no idea how ethical they are.
For whatever reason there seems to be a number of apartments sprinkled around Retiro and few more in Chamberi and Salamnaca, all acceptable areas. Her needs are A/C, a nearby Metro stop, an elevator, and nearby food shopping. The elevator could eliminate some apartments on the smaller streets. She knows Spain and Madrid well and her Spanish is pretty good.
We suggested looking near the Templo de Debod, but have not seen any listings.
There are many near Los Museos de Jamon. (That is a joke.)
