I was in Lucca for a 5 days last year and found the UPIM and some of the larger stores and restaurants open on Sundays. Nearly everything was open on Mondays. I think museums are the only place affected by closure on a Monday (if at all!). When we were there, everything was open (the duomo, Piazza Napoleon bldgs - saw an exhibit while there - Puccini's home, etc) so I wouldn't worry if I were you!

I can't recall what days of the week I've been there....
But this sounds like great fun:
"A huge antiques market, one of Italy's most important, is held the third Sunday (and preceding Sat) of every month in Piazza Antelminelli and the streets around the Duomo. It's great fun but also leaves rooms hard to find and restaurants booked, especially at lunch (even those normally closed Sun reopen for this one). It's spawned a local art market on Piazza del Arancio on the same dates, and the final Sunday of the month sees an artisans' market on Piazza San Giusto."
