Italy Tuscany or Umbria, Naples area advice please

On Chowhound's forum, Elizabeth Minchilli--a food writer with homes in Rome and Umbria--recently suggested Madonna del Latte for a winery tour/tasting near Orvieto. It is my understanding that they will pick you up in Orvieto. She also did a write up recently of a goat cheese producer and farmer in Orvieto that offers tours and tasting as well. You can also taste these cheeses at Madonna del Latte.

Hi, I just thought I'd post a short trip report as it was AWESOME!!!
Taking into account all the helpful advice
We spent two wonderful nights in Venice, hope to get back, yes, two nights were not enough, but we were most impressed with the beauty , the cleanliness, the people, and the the amazing, reasonably priced restaurants with delicious Northern Italian cuisine. Got lost repeatedly but we didn't care as every turn was another beautiful sight!
Our Train to Orvieto for 3 nights was easy, with a transfer in Florence. Visited a winery and the goat farm mentioned in above post, lovely farm tour, so much to taste , we couldn't finish, accompanied with a lovely Rose . Stayed in a cute Bed and Breakfast on a little street off the piazza, went to Saturday market, took Duomo, underground and walking tours, all well worth it , can take all 3 tours in a day, sign up at tourist office.
Train to Rome, wonderful 3 days , nighttime colosseum tour, Roman Forum, Appian Way, Hotel Madrid, lovely 3 star hotel reasonably priced near Spanish Steps, walking distance to many ancient sites. Wish we skipped Vatican tour as it was very crowded with tour groups , really the only bad experience in our entire 15 night trip.
Train to Naples, then a very nice taxi driver brought us to the Capri ferry port and even got out and compared best times and price for our ferry trip. Amazingly kind people !!
Capri was just what we needed after Rome. Loved our 3 night there, so happy we chose to stay there. We stayed at a cute little hotel right in Capri town ( no cars- delightful! ) called La Tosca. What really made this place extra special was our host Ettore. He planned both of our two full days for us , made reservations for boats, Blue Grotto, beach club, and restaurants , and they were all perfect and reasonably priced. (He is married to an American and lives part of the year in Connecticut which is close to us)
Took the ferry to Sorrento for our final three days - Herculenium, Amalfi Coast, and a visit to a lemon orchard and another cheese tasting at a dairy farm. Wonderful trip! Can't wait to return to Italy ! I think mid May was a perfect time to go, not too crowded, with everything open and running.
