5 days spend in Istanbul is more then enough to visit all the important places like the Topkapi Palacae, Saint Sophie, the blue mosque, undergorund cistern, the islamic art museum, the grand bazaar and the spice market, and a nice boat trip on the bosphorus. However Turkey is a hugh countries, and depending on what is your interest, you can take a domestic flight to the south of the country visit roman, ancient greek, lycian, carian sites or fly to Cappadocia and visit on of the seven wonders the underground cities and the caves...
To combine greece during that time of the year I will say it will be a waste unless you fly to Athens hire a car and drive th the peloponnese,or north. With the islands life comes to an end by middle october, ferries dont run as schedules except the big ferries from athens.
So live greece to springtime and explore turkey in more depth..If you need more info let me know...
safe journey and enjoy Istanbul and the food...try sebahattin fish restaurant below Topkapi palace, hamdi meat restaurant near the spice market and pandeli at the entrance of spice market open only for lunch..ancient greek and ottoman cuisine...try begendi...
