Without necessarily answering your questions...
I've used Travelocity and Expedia to get prices/research and book.
Some hotels have their own website (stayed at both) e.g.
http://www.hotel-paris-notredame.com/
http://www.paris-hotel-lutece.com/
And then there are hotel chains, like Accor/TImhotel (I've booked timhotel before):
http://www.accorhotels.com/gb/reserv...tination.shtml
http://www.timhotel.fr/
And then booking sites...
http://www.france-hotel-guide.com/en/index.html
Using TripAdvisor is good in all cases to see what (hopefully independent) travellers are saying about them. Are you starting with a price (or area)...then picking...perhaps if you post your range, we can give you some choices.

There are 3 sites I like to use for 'looking' b/c they have photos and customer comments. But I always book a hotel directly via their own website or email, and do check the hotel reviews at Tripadvisor.com
www.venere.com
www.booking.com
www.parisby.com (and other locations)
