Most people recommend staying in the mountains rather than in Interlaken.
We stayed in Lauterbrunnen which is only a short train ride to Interlaken. The views from our room at the Hotel Oberland were amazing.
However, if you are going in 2 weeks, many places may already be booked.

if you decide that you want to stay in Interlaken, try the Lotschburg hotel, we stayed there a couple of times and it is an easy "jump-off" to many of the mountain side trips. It was a short walk from the rail station and a supermarket for inexpensive dining.

Thanks so much. We're not locked in to staying in Interlaken. I know we are going to Jungfrau and thought that was the best place to stay. We will be arriving by train from Paris. Any suggestions are greatly appreciated.

We stayed at Hotel Staubbach in Lauterbrunnen. IMO it is much prettier there than Interlaken and much less crowded. See for yourself on their website:

If you do stay there, make sure you take a walk away from the hotel (left out the front door) towards the waterfall and campground - you should see the cutest little lambs/sheep running in a wildflower dotted meadow. When we were there they all had collars with bells on that jingled as they ran - absolutely adorable with all that beauty surrounding you. Have a great trip!

Lauterbrunnen is just 20 minutes or so beyond Interlaken by train, and is closer to the Jungfraujoch (if you ascend via Wengen). Most of the hotels there have rooms with balconies and lovely views. If the Hotel Staubbach is full, try Hotel Oberland.
