Honeymoon HELP!!

Really interested in the sights old culture/architechture. Love beer and wine, so would also like to do some tastings etc. Big foodies too and this is why I am leaning towards Italy, heard Ireland is not that great food wise. Not sure about weather, worried some touristy things might not be open.

And it says nothing other than you would prefer to eat Italian food.
Every place has sights. Ireland and Italy both have old culture. I don't know what architecture you're interested in -- run-down castles and ruins are Irish specialties, but world famous cathedrals are not. Do more research (I hear Fodor's has really good travel guides on this website and even BOOKS for travelers) and figure out how much time you have and what you want to see in each country and why.

The way the question is phrased, it is not answerable. When there is more behind it ("we like X and Y and Z and Ireland has X and Y but Italy has X and Z and more of W too, and we think this and this and this might be good -- any Fodorites have any advice as to what might work best between these two possible places for a honeymoon?") then you can get a ton of help here and much of it will reveal to you what your preference probably was all along (which right now seems like Italy).

This part's easy:
For wine - go to Italy.
For beer - Ireland.
Something that helps me make travel decisions is to plop down in a bookstore in one of those cushy chairs with a stack of travel books, ones with great photographs, and start looking. I can get a better idea of a "new" place and decide if it is what I was picturing or not.
Or you can sit down with your fiance and make lists - just brainstorm - of what you really want to do/see on this trip. Being a little more specific might help you decide which destination has more of what you really want for your honeymoon.
I've only been to Ireland once and really liked it; it was June and it was cool, rainy, some glorious days, lush and green. March - I have no idea, sorry.
Italy I've been to spring, fall, early summer, summer. All kinds of weather, but March can be cool if not cold in early March, depending on where you go. In big cities like Rome, Florence and Venice you should have no trouble in March with things being closed. Coastal resort areas could be a different story, with less open and that kind of depressing out-of-season atmosphere (which you may love; I'm just thinking of what I like.) The good thing is it is before heavy tourist season so you could find some nice rates!
I'm certainly not recommending this, but your dilemma reminds me of a couple I knew who did both these countries, Italy and Ireland, in the same trip. Flew into Ireland, took a domestic cheap airline to Italy, flew home from Italy. They took their bikes with them, too. Had a great time in both places.
