hill towns of Andalusia. worth a night?

hill towns of Andalusia. worth a night?
I will be traveling in Andalucia in late Feb/March. I was hoping to hit a few hill towns between Seville and Granada. Ronda...Grazalema….Arcos de la Frontera. If we were going to spend a night there in one of those (or others in that triangle), does anyone have any suggestions as to which? And/or specific lodging?
I would prefer a town that has some decent restaurants or bars in a historic center

I also highly recommend Ronda, a very unique and wonderful place. We loved Hotel San Gabriel, which is central in the "old" section with many sights. Eat at Dona Pepa, on the "new" side (near bull ring) and killer view from patio hugging edge of the gorge at San Miguel, right next to the Puente Nuevo on the "new" side of the bridge.

is thwre any kind of nightife in Ronda. Or let me rephrase, how late are bars open? We are not dance types....just a few drinks and some conversation.
and are there any areas or actual establishments folsk can recommend where locals go vs tourists?

Another vote for Ronda--it has the most to offer.
Arcos is worth a visit, but when we stayed there a couple years ago, we couldn't enjoy the view from our terrace because the smell of sewage was too strong.
