The two best places for pottery and tiles are Kutahya and Iznik (Nicea)
Unfortunately, you will not have time to visit either.
There are some pottery/ceramic wholesalers in Cemberlitas area in Istanbul and you can check there.
I also recommend that you go to one of many Pasabahce shops
(the one near Tunel, on istiklal Street is of reasonable size) and check their special collectibles.
Kutahya Porcelain has a shop at Metro City shopping mall, easily reachable by Metro from Taksim. They may have somethings for you.
Buying from touristy shops in the Grand or Arasta bazaars will not guarantee you price-quality ratios, but if you see something you like and the price you negotiate seems reasonable, why not?

Is your Cappadocia hotel in Uchisar? You'll love the area. I agree with otherchelebi; get a guide in Cappadocia. There's so much history, you won't want to miss any of it. Our hotel in Urgup suggested an agency that was fantastic (Rock Valley). I imagine there are many in that area.
We met people in Istanbul who stayed at the Seven Hills and loved it. It's very near the Blue Mosque, but I don't know about the views.

We are staying at the Cappadocia Cave Suites in Goreme; it seems like a real cave hotel with some unique features.
Thanks for the tip on Seven Hills, I think that's where we'll stay for the last 2 nights.
