Do you mean, do we know where they are..? In Paris, there are 'big' grocers, often at the top floor or basement of Monoprix (a sort of department store). Franprix is one, and maybe Ed... then there are often 'small' grocers in the neighborhood, kind of like a convenience store.
If you go to www.pagesjaunes.fr, and do a search for "epicerie" or maybe "supermarche", and enter the Paris zip for your hotel location, the site will come up with a list of grocers near your hotel area.
In France, you bring your own bags or pay small amount (.25E or so) for bags. If buying produce, you usually will weigh it, pull off a sticker w/ the price printed on it, then the checker will add it to your bill.

Can't remember the names of any stores in Amsterdam, although I know I went into one a couple of times, a few blocks north of Leidseplein. I think they charged something for my bag, too. English is more readily spoken in Amsterdam, so ask around for a store near you.
Hope this helps... are you going to do some cooking...?

Printemps in Paris
Albert Hein in Amsterdam

Both are good ones.

Not meaning to sound sarcastic, but since the residents of Paris and Amsterdam also shop for groceries, you'll find grocery stores just about everywhere! It might us give a better answer if we knew exactly what you want to buy.
