I don't know any of the hotels, but the must-see in Granada is the Alhambra, and I would suggest that you reserve. Google "Alhambra"; it has an official Web site where you can reserve. If you are there overnight, consider a night visit in addition to a day visit; the Alhambra is quite magical at night.
The must-see in Cordoba is the Mezquita and the surrounding area.
I disliked Seville and can't remember anything there that I would consider a must-see in the same class as the Alhambra and the Mezquita.

We just returned from a trip to Madrid, Seville and Granada. I hope to get my trip report out in the next week or so. We stayed at Hotel Casa Migueletes and I would definitely recommend it. The location is great - we walked everywhere and the staff was extremely helpful. Our room was lovely. We took the 'small room (yest is was small) with the patio and view of the Alhambra. We loved it. My only caveat is that I would not trust the 'recommended list of restaurants' provided by the hotel. I had done some research on my own, and none of the restaurants on the list provided by the hotel were on my lists. We relied on our lists except for one night and that night we dined where the hotel recommended and it was our one bad meal on the entire trip.
In Seville we stayed at Hotel Amadeus and had a wonderful stay. Hotel Alminar was highly recommended, but we wanted to stay in the barrio Santa Cruz, and we were glad with our choice.

I love hotel alminar
Location IMO is perfect.. right next to the cathedral. The staff is great, you“ll love it! You“re also right next door to Casa Robles, a GREAT place to eat. I had some little clams in a sherry sauce... they tried to take the bowl away twice but I hadn“t finished lapping up all the sauce yet! All the bitter orange deserts were fantastic too.
Must-see“s in Sevilla: Alcazar, Cathedral, the bullring, Plaza de España. Check out www.maribelsguides.com on other stuff to do.
