Getting around France
My very general plan is:
3 days in Paris (I was just there in March so just for aother little taste)
3 days Antibes
4 days St-Remy
We can fly to Paris direct from Chicago then I am at a loss. Do we fly to Nice? What airport is near Provence? Should I flip Antibes and Provence so I can fly out of Nice. How long is the train from Paris to St-Remy/Antibes?

To get to St-Rémy by train you'd take the TGV from Paris to Avignon (hopefully on a PREM fare). You'll probably need a car to get around that part of Provence - don't know anything about public transportation there, but I don't think there's a train station in St-Rémy.
The nearest airport to that part of Provence is Marseilles - about a 45-minute drive.
Don't know if there's a train station in Antibes, either (a google search should help you find out) - I expect you'd take the TGV from Avignon to Nice and get to Antibes from there.
Or yes, you could fly to Nice from Paris and do the trip the other way around.

Your best bet is open jaw--fly into Paris and out of Nice. TGV to Avignon and pick up a car. Antibes is about 18 km from the Nice airport, so you don't need a lot of advance planning to return the car when you leave.
You do not want to go to Nice first, then Paris, because it is much more complicated and time consuming to return the car.

Do what Ron says. Fly into Paris. Take the high speed train to Provence. We stopped in Avignon, spent a night in the walled city and then picked up a rental car at the train station and drove around Provence. St Remy is a great place to base yourself. Then drive to Nice and fly out of Nice. Great trip! Easy to do.
