From Paris...go to Normandy or Alsace first?
This is our itinerary for Northern France...my question is, is it better to visit the vineyards in Alsace and Burgundy at the beginning of Sept or the end? Should we flip our route?

Sounds great to me.
Normandy and Brittany, being on the coast, already aren't "hot" & can get cooler as the season changes, and though it will be getting cooler in the Alsace too, you will be getting in on wine harvest activities later in the month there.
My personal preference would be a day less in the Loire, only because I get "chateauxd out", even tho its beautiful.

Wow. Your itinerary is pretty similar to ours, except that we are going in early October and will be spending time in Dordogne, rather than Brittany.
I would not "flip" your route because the Alsatian vineyards will likely have more striking colors near the end of September, and the weather in Normandy and Brittany will only get worse.
