France: Escargots Passe?

France: Escargots Passe?

In a recent visit with French in-laws in France we were walking in the countryside and saw a snail. I asked if they liked escargots - the French word for snail as i thought it to be a delicacy in France.

But their universal reaction was ' a disgusted look on their face and saying few folks eat them much any more - that they were so slimy to be nauseating. I guess they were talking about their look in nature though i think when they are prepared as food they don't look so slimy.

Now these folks rarely dine in fancy restaurants as don't many typical French folk it seems so they may not be up on haute cuisine...so

are escargots still a popular dining fare in France?

Of course they're still popular in France, you can even find them frozen at the hypermarket. Check the menus on restaurants in Dijon and you'll they are popular!

I think it depends on what region of France you are referring to.

Coco: Are the frozen ones from France or from the Far East?

are these snails the ordinary garden type or are they different - is a snail a snail - i suppose they have snail farms of course and you don't pluck them out of the garden.

maybe farm snails are fed special diets to taste better?

I think I remember reading that snails that will be eaten are fed cornmeal. But coco will know.

I have eaten Escargots a few times and they were good which surprised me.

As a teenager we used to collect the big escargots de Bourgogne we could find in our garden and we fed them with flour to clean them inside. After a few days, they were cooked by my mum with a garlic butter and tasted great!
I supposed Escargots de Bourgogne (Hélix Pomatia) have to be collected in Burgundy but otherwise they might come from other countries.
