You should try the Cimatori Guest House. It opened last fall and has only 5 rooms -- breakfast is included. The rooms were quite large and everything was brand new, although the building was built in the 17th century. We really enjoyed staying there.

Here's some info on a great B/B my wife and I stayed at last year:
Soggiorno Battistero
Piazza San Giovanni, 1
Firenze, ITALIA
Tel: 39 055 259143
Fax: 39 055268189
Email: [email protected]
Website: www.soggiornobattistero.it
This is a B&B ideally located in the heart of Florence. We loved this place. Kelly and her husband Luca really stay on top of things here. Breakfast is served in your room. The building faces the Baptistry, Duomo, and Giotto Tower. From here, you can get to everything you want to see in Florence in just minutes. There are many places to eat in the area and gelaterias all over the place.
The facility is a brief 5-10 minute walk to the train station.
Rooms 1-2-3-4 overlook the Piazza and may have more noise than the inside room. We had requested a room that did not overlook the Piazza and Kelly gave us Room 6 and it worked out great for us.
We would definitely stay here again.
Our rate was E88 per nite. Again, this rate was last May.

Reiss,
check out www.touristhouseghiberti.com it's a new B&B with modern aminities directly behind the Dumo.
I will be staying there in mid Sept. for 4 nights and plan to post a detailed Italy trip report in early Oct.
I am paying 145 euro. for a deluxe double with private bathroom.
Claudio and Christalle have been incridably helpful, making museum & restaurant reservations.
tripadvisor.com and eurocheapo.com have both given the T.G. very favorable reviews.
Best of luck

Dear Reiss:
I see on your other threads where you asked others if they thought that the planning of a "holiday" was stressful or pleasant. After looking through your posts I can understand why you would ask that question. So you mean to tell me that you are going to go to Boston, rent a car to travel to Maine, and also go to Italy in the same month. I personally think your messages reek of BS. Have a nice vicarious vacation on someone elses time.
