If you haven't booked your flights yet, fly into Amsterdam and out of Paris.
I know Brugge is very quaint and all that, but teens may enjoy Amsterdam more, so add a day there if you can.
If you have booked your flights, I would still cut a day from Brugge and add it to Paris or Amsterdam.
From Brugge you can cycle to Damme. Or take the train to the coast and go cycling there.
June 10 is a national holiday in the Netherlands and Belgium (not sure about France). Plenty of things will be open though, especially in tourist areas.
But be aware that this is a popular weekend for short breaks, so hotels will book up quickly.
