I don't know if this will fit in your price range, but the Mount Royal Hotel on Princes Street has a great view of old Edinburgh and the Castle.
Of course, you do need to get a room facing the street. I've stayed there a couple of times, and my mother has (separately) also.

Barbara: Don't worry - "dear sweet" Robes has decided today he's going to call everyone a controling so-and-so. (and he certainly should know one when he sees one - something about a pot and kettle)
You do notice he never offers any useful advice unless it is about the buses in London - apparently that's the extent of his knowledge of the UK
Now back to jrinla: - we really do need to know how many days you will be in Edinburgh and how much you want to spend.

"...apparently that's the extent of his knowledge of the UK." Let me know, and I'll share some of the details of my time as an undergraduate at Glasgow University (Reading for English), as well as the several dozen to few hundred trips I've made to the UK in the past 40 years.
Or I might not - upon reflection, I think I'd rather let you dig yourself in a little deeper.
(Did you ever wonder what it would be like to find out that you were more intelligent than all of your teachers? I didn't think you would.)
