Easter in Paris: what's closed

A friend just sent me this information about closings on Easter Sunday and Monday.

Notre Dame Crypt: Closed both days
Catacombs: Closed both days
Marmottan: Closed Monday
D'Orsay: Closed Monday
Rodin: Closed Monday
La Vilette: Closed Monday
Carnavelet: Closed Monday
Jeu de Paume: Closed Monday

This is exactly what I was looking for, as I arrive in Paris on Easter Sunday (probably why a ticket was available for miles).
Now...can anyone help me with what two newcomers to Paris should do on Easter Monday, since that seems to be the day most everything is closed?
And, will we have trouble finding open cafes?
