You could go further south to Kotor alongside the Boka Kotorska (Kotor Bay): a lovely little town and a very scenic drive alongside the coastal road. Some nice little villages such as Perast with the Viscovic-palace.
Up north, you have the Dalmation coast and the hubdreds of islands...

I thought a day trip from Dubrovnik over to Cavtat was a nice leisurely way to spend a day. There are boats leaving from the docks in old town, the ride gives you a very nice view of the old town.
I'd also recommend a day trip into Montenegro, I think Atlas had one that visited Kotor, Budva, Cetinje and some of the other highlights. Not sure how it is now, but a couple of years ago it seemed like it would have been difficult to arrange a visit on your own.
