I'm planning a trip for February and have been collecting B&B/guesthouse recommendations for the last month.

One that I am looking at for Doolin is Cullinan's Restaurant & Guesthouse. They have 5 ensuite rooms.
www.cullinansdoolin.com

Toomullin House B&B. Offers a delicious yogurt and fruit breakfast as a nice change from the big Irish breakfast. Friendly host. Easy walk to town.

I loved Cullinans in Doolin. The rooms were comfy and cozy, service excellent and the dinner was WONDERFUL. Try the honey and lemon pancakes for breakfast but they are Irish style like creps rather thna American style ones. You had better make reservations there cause they are extremely well known and with only 5 rooms they get sold out quickly.

We stayed at Susan Daly's B&B. www.dalys-house.com
Nothing luxurious, but clean and comfortable. Susan seems to know everything about the area, plus she's very welcoming and interested in her guests. The B&B is within easy walking distance of O'Connor's Pub.
