There are several: DFDS from København (www.dfdsseaways.com), Stena Line from Frederikshavn (www.stenaline.com) and Color Line from Hirtshals (www.colorline.com). The DFDS ships are big ships with most cruise ship amenities. When I last used the service, I had some beers, ate dinner in the buffet restaurant, went to bed, got up, had some coffee, then went ashore. The ship spends three hours or so sailing along the Oslo Fjord which is scenic, though not spectacular.

My daughter took one of these ferries a year and a half ago with a school group. (Teenage perspective may be different than yours, though). They thought it was great. Said food was OK. There were four in a cabin and they found it small (but bigger than the overnight train they took on same trip). If you have more specific questions, I'll ask her.
