Any suggestions for a good culinary itinerary or day class in Italy?

I enjoyed a half day cooking class with Eleonora Consoli near Catania. Sicily has some of the most interesting cooking traditions and ingredients in all of Italy.

Many thanks to all. We have found a three day in Cinque Terra, actually in Monterossa at Hotel Punta Mesca and ristroante Belvedere. Also a one day featuring the traditional Easter menu in Parma thru Barilla. Looking forward to both.. Thanks to all who responded.
