Just as a head up:
People who have gone to the Viking ship museum and LOVED IT will tell you it is a MUST SEE and you MUST GO and it is ABSOLUTELY FASCINATING. Simply put, I wouldn't trust an internet answer.
A lot of people go to the Viking ship museum only because it is listed in guidebooks as a "sight" and they didn't know what else to do with themselves that day in Denmark. If you are terribly interested in Vikings or ships, of course you should go. If you have sufficient money, then go and if you are bored, then leave. But if reading about it doesn't grab you, then be skeptical about going.

Two summers ago, we stayed at the Mayfair Clarion near the Copenhagen central train station and went to the Viking Museum. It's a direct train ride to Roskilde, but then it's a bit of a hike to the Viking museun, so I suggest taking a bus, just outside the Roskilde train station.
We found the museum very interesting, but I agree that many programs are oriented to kids. The interpretive guides spoke english and signs to everything include english. It's a half-day trip.

I went several years ago, so my impressions are not that up to date. But my whole family enjoyed this very much, and the youngest of us was about 18 at the time. The day we went, there were rides available on a replica of a Viking ship where people all pitched in and rowed. This appealed to adults even more than children, it appeared.
There were activities set up around the grounds, geared at both children and adults. This might only have been because it was a summer weekend, though.
The guided tour of the museum itself was extremely interesting.

One of the ships, Roskilde 6 is currently on display at major Viking exhibition at the British museum.
We went to Roskilde about 30 years ago and enjoyed it, but the museum has changed a lot since then of course.
Unless you are particularly interested in Vikings and their ships, or have a day going spare, it is probably not worth going. Only you know your level of interest in such things.

We went last fall and enjoyed the outing to Roskilde - Viking Museum as well as the famous Roskilde cathedral- as a way to experience a bit of Denmark outside of Copenhagen. That said, yes, only go if you are interested in the Vikings! My husband is very interested in them, me not so much. We did take the boat trip mentioned above and it was really fun.
A different outing which I enjoyed even more was to the modern art museum Louisiana which is also a hour or so by train - a wonderful day trip if you like art. Great restaurant for lunch there too.
Lastly, if you want to see a Viking exhibit but not go all the way to Roskilde, the National Museum in Copenhagen has a great exhibit.
