There's a luggage deposit service in the S. Maria Novella station, where I think the cost is €7 per bag per day. I have used them in the past, with no problem. There are also private bag storage services, often in partnership with hotels, which may be cheaper. One is called BagBnB. I've never used them, so can't give an opinion.
