Virgin express (www.virgin-express.com/)and Meridiana (www.meridiana.it/en/index.html) will probably have the best rates. But check out www.flybudget.com for a comprehensive listing of budget airlines.
You can also check www.schiphol.com and KLM.com for last minute deals.

Hi P,
www.easyjet.com will fly you Rome Ciampino/London Stansted/Amsterdam for about 22 GBP plus tax.

That's a little misleading - - 22 GBP plus tax. You would have to overnight at Stansted to get those fares, on flights that do not connect on the same day. The best fares that I see that actually work are 20.49 euro plus 16.99 GBP plus taxes (12.50 euro plus 11 GBP).
It's close to $94 USD (doing the math roughly in my head). I am a big, big believer in the low cost intra-Europe airlines, but there is no point in creating an unrealistic expectation about just how low their fares really are.
Having said that, Ryanair DOES have a lower fare of 2.50 euro plus (13.22 euro in tax) but it would mean sitting in Stansted for 6 hours. Even worse (but cheaper), is 12 hours at the airport, and fly Stansted to Eindhoven (which is admittedly NOT Amsterdam, but close) for 0.01 GBP plus 13.86 GBP in tax. Yes, that is not a typo. One penny, in pounds sterling.
Best wishes,
Rex
