We loved Bruges. It is a great walking and biking city. We visited in early May of 2006 and we were fortunate enough to stay at Tine's Guesthouse. She treats you like one of the family- well actually better than that! (http://www.tinesguesthouse.com) She has bikes you can use and she makes you lunch each day to pack along. We bought fabulous panniers for our tandem (which we could never have afforded in the States) at her favorite bike shop. We picnicked along the canal on a park bench in the drizzly rain. We found a "dollar" store to browse and we cooked most of our dinners in the guesthouse kitchen. There is a tavern with 100 or so beers (Bier Temple, if I remember correctly)which is fun. The Bruges people have a great sense of humor which you can see in their artwork, their merchandise, and their people. We want to go back some day to see Tine.

I think Brussels is worth at least a day. It has a great art museum and one of the most spectacular squares in Europe.
Ghent is also a very interesting place to visit with a beautiful medieval section and a famous alterpiece by Jan Van Eyck
I would go to one or both of these cities in addition to Bruges
