Have never had it in Paris, but a few years ago made a day trip to Marseilles to have bouillabaisse in what is "supposed" to be the best and most authentic bouillabaisee restaurant there. We were surprised that after they brought fresh whole fish to our table to show us which fish they'd be using. They finally brought us the fish itself, cooked and served rather plain. This was followed by the soup course, a thick rich stock (but with absolutely no pieces of fish or shellfish in it) served over big hunks of crusty bread and the wonderful thick garlic rouille to swirl on top. It was great, but had no relation to what I had expected -- a big bowl of a fish and/or shellfish stew.
