What restaurant in Paris serves the best boullibaise?

Bouillabaisse, Janet, bouillabaisse. Trust me, you don't want to order "boullibaise"* in a French restaurant, either in Paris or in Provence. <BR> <BR>* it doesn't mean anything at all but can lead to really, really bad puns

Bonsoir Florence. I like your comment, really... <BR> <BR>Janet: Can't help you out, just can't stand bouillabaisse but I am sure you get some nice tips. However, IMO, taste is a very personal matter. Difficult to say "what is the best".

Le Petit Nicois (10 rue Amelie, 7e) near the rue Cler, has wonderful bouillabaisse, served in vast quantities in the pot in which it is cooked. The owner is charming, and prices are reasonable. It was the perfect meal for a rainy afternoon....

Have never had it in Paris, but a few years ago made a day trip to Marseilles to have bouillabaisse in what is "supposed" to be the best and most authentic bouillabaisee restaurant there. We were surprised that after they brought fresh whole fish to our table to show us which fish they'd be using. They finally brought us the fish itself, cooked and served rather plain. This was followed by the soup course, a thick rich stock (but with absolutely no pieces of fish or shellfish in it) served over big hunks of crusty bread and the wonderful thick garlic rouille to swirl on top. It was great, but had no relation to what I had expected -- a big bowl of a fish and/or shellfish stew.

Charlot "Roi des Coquillages" in the 9th serves an excellent, and supposedly authentic, bouillabaisse. First you get the broth with rouille and bread, then the fish. The red Michelin guide lists other restaurants known for "une bouillabaisse."

Marija is correct. We got the soup first, then the fish.
