Positano is a small village, nothing like a city and a great many of the hotels, cafes, restaurants etc. are closed during the winter period, reopening around Easter. Some may make a brief appearance at Christmas/New Year but many do not. I'd guess that this is why you've been having trouble finding somewhere to stay.
It's certainly not an out of season place to visit and you may be better staying in Sorrento and catching the bus to Positano if you want to see it, or hire a car.

The thing to remember about Positano is this: the entire town is vertical. The views at the top are amazing, but you have to climb a lot of steps to get there.
We rented an apartment near the top, but it was very close to a local bus stop. So if we didn't feel like climbing up or down, we could get a pretty cheap ride without much wait. Just a thought.
