4th/5th/6th are good choices.
I like Ile St Louis (4th) quiet at night..villagey feel...can walk to Notre Dame...Marais...Left Bank, 7th is quieter and a bit further out (~no nightlife), 5th and 6th are full of restaurants and cafes...and sites to see (some nightlife).
Realize that the Metro is very good, so you are never really "far" from hub when in central Paris.
Budget is also a factor...you may get a cheaper hotel further from centre.

I am in Paris right now and surfing for an old posting that had the name of a kitchen store on it- as for your question I think it depends on what you want to do and what your expectations are. If you share more, I can let you know my thoughts as I have been all over (both planned and unplanned

1239...The store is called Dehillerin and it's walking distance from the Etienne Marcel metro stop. There's another one very close by, too called MORA(?). I've shopped at both since the 70s. They are very well stocked. I prefer Dehillerin over MORA. Happy Travels!
