Assistance with trip/itinerary to Turkey/Greece

How does this sound as an itinerary by reversing the loop...
1. Istanbul 2 nights (Sirkeci/Fatih) depart 27th
2. Fly to Kayseri/Cappadocia - 2 nights
3. Depart Cappadocia 29th May and head to Izmir/Ephesus
4.Then Kusadasi go to Samos and Ikaria
5. Then Ikaria go to Kos/Bodrum
6. From Bodrum to Marmaris. Marmaris to Fethiye Gulet 14th June (4 days/3 nights)
7. From Fethiye make my way to Thessaloniki 18th. Fly to Istanbul 22nd stay the night and fly back home 23rd.
OR fly to Thessaloniki via Istanbul from Cappadocia
Fly back to Turkey (Dalaman airport via Istanbul) 3rd June, jump on the Gulet 4th June from Fethiye to Marmaris
7th/8th June go to Kos-Samos-Ikaria (Bodrum/Kusadasi stops), Izmir/Ephesus and fly back to Istanbul for my return home.
I have written fly but it could be via bus or ferry/catamaran pending on timetables and price. Is car pooling/sharing a thing - safe if an option in Turkey for a solo female traveller? After spending time in India not a great deal will destabilise me but safety is always on the radar.
May be a case of neither here nor there with the alternate routes. The latter option will take Thessaloniki out of the equation earlier and focus will be on Turkey's south coast/3 islands.
I also had a quick look at the option to hire a car from IST airport and drive to Thessaloniki and back. From a $$ perspective quite appealing!
I could then drive myself to Xalkidiki and Edessa

Everything is possible.
If you want to fix everything before leaving your home country, you should begin to book you gulet trip and your flights now.
Otherwise you may be constrained to change your plans in accordance with what is still available.
Point 7:
I wouldn't travel via Dalaman - Istanbul, but via Rhodos:
Fethyie dp 8.25 - catamaran - Rhodos ar 10.15
Visit the stunning medieval city.and have lunch.(surch in the web for the best luggage storage point)
Leave Rhodos at 13.45 by airport bus.
Leave Rhodos Diagoras airport at 16.00 by drect plane (AEGEAN airlines) and arrive at Thessaloniki airport at 17.15.
"car pooling/sharing a thing*: just not usual in Turkey. People travel by bus, minibus or taxi. But Turkey is not less safe than other European countries.
