Anybody have any new recs for one night in Amsterdam, with great food (thinking with meats as the mains), a lovely atmosphere (not too noisy, maybe a cozy old world feeling); and trying to keep it at no more than 100 Euro per person?

Amsterdam food is not really great unless you spend well over 100/per person.
However, I think you might like De Waag on Nieuwmarkt (ultra historical building): ok food, but nothing stellar
And I can recommend Cafe Bern and its fondue and cotelette Suisse. But do book, because it's very popular with Amsterdam locals.)
Or maybe The Cottage, on Linnaeusstraat https://www.thecottage.amsterdam/
