Perhaps I should have said we will start the days train travel in Avignon. We are a couple of senior citizens (my husband is 85) looking for town with easy access from train station. Thought the older hotels in Bordighera looked interesting. No need for vibrant nightlife..a nice walk, good meal, and glass of wine does us in.

Santa Margherita Ligure would be my choice. It has a feeling of tourist town with residential working town mixed together;areas where you can walk and enjoy the water,a coffee or meal;lots of differently priced hotels or B and B's;water bus to Portofino which is fun,etc.You can train between the different towns in C. T. without a hassle and its very picturesque.

Santa Margherita is very attractive - but Avignon-Santa Margherita would be a long journey (- approx 9 hrs).
If you are only planning one stop en route you may prefer somewhere nearer halfway - in which case Alassio would be a good option IMO (- approx 6 hrs from Avignon).
Certainly a better choice than Bordighera IMO.
