You will get some responses here, but you should also join cruisecritic.com, find the rollcall for your cruise and join it. There will be many people who have been to all those places. They may also be forming groups to go on their own, rather than on the ship's excursions.
Look for reviews of that ship and it's cruises to those ports. Look for reviews of those ports also and they will include excursions.
The only port you are going to that I remember for sure is Cosumel. We took a taxi with friends to a day resort on the beach. It was really nice with a beautiful pool, clean changing rooms and reasonably good food. There were plenty of chairs and umbrellas, and lots of blow up things like slides, in the water. If that interests you, I can find the name of the place. Next time, I would probably rent a car and explore, or have a taxi take me on a tour.

Well wish I could help but can't say much. We were in these ports but were there to relax and we just strolled around. We did leave the immediate port setting in Belize and walked into Belize city but it looked rather dicey so we went back.

I looked it up. On Cozumel, we went to Paradise Beach Club. We were with friends and had two small kids with us. It was a great beach day.
It is a nice beach with blow up slides, etc. in the water, kayaks, surf boards, beautiful grounds with lots and lots of lounge chairs, umbrellas, trees, etc. there is a beautiful pool, nice restaurant bar, very clean toilets and changing rooms.
It will cost about $10.00 to $15.00 each way for a taxi (for the trip, not per person), or $30.00 for a van for 8 people.
Entrance fee for the beach, pool, etc. is $3.00. It is expected that adults will spend about $10.00 each for food.
If you want to use all the slides, boats, etc. it is $18.00 for the day.
There are other excursions like horse back riding on the beach. Check them out on TripAdvisor.
