We used Sea Sports Belize at http://www.seasportsbelize.com/welcome.html from our cruise. They were great. Quality equipment, very informative, nice boats, they provided drinks, lunch, snacks. The snorkeling was wonderful (a little remote island with a few people docked for snorkeling- it wasd paradise), they are just a short walk from the docking pier, and best of all, if the cruise ship allows, after your tour they will drop you right back to the cruise ship. You normally have to take a water taxi from the ship to the dock because of the reef. Also MUCH, MUCH less crowded and less expensive than the cruise line tours. We had 7 people on our excursion and passed many other tour companies from the cruises that were just PACKED with people.

We used Bak-a-Bush through Princess when we were there in January. The zipline is about 45 minutes to an hour outside of Belize City. A light lunch and beverages were provided. They were very safety conscious. We thoroughly enjoyed the zipline -- this is the second that we've done. The first was in Nicauraga. The Belize one is on the short side -- I think it was 5 lines + 2 rappels. My only complaint was that the moved you through the lines rather quickly and independently. I enjoyed the one we did in Nicauraga more as they took more time and we moved as a group so it was easier to see everyone and take pictures.

The transport from the ship to the zipline was by van. I don't remember the exact length of the tour but I'd say around 5 hours. We were back in plenty of time to check out the "tourist village" that is at the pier and have a drink before we caught the tender back to the ship.
The van driver was also very good at explaining where we were going and showing points of interest along the way. He answered lots of questions for us as well.
