Anacaona, Coyaba, and Magnolia are all excellent choices. We made reservations usually on the day we wanted to go. You might not even need reservations, particularly if it's a week day. We also really enjoyed Grace's Cottage, but I've seen mixed reviews on this site. But then again, we thought Hemingways was adequate at best, and many people rave about it.

The restaurant at The Sands is very good. We stayed there last year and ate out only twice - Danny Buoys (LOUSY) and Tiki Hut (decent). On our previous trip we stayed at OCW and their food/service was average at best. While there we ate at Calico Jacks and Lattitudes - food at those places was okay.
The restaurants mentioned in the other post are upscale and very romantic.
Hemingways at The Sands has nice atmosphere but more reasonable pricing than the others mentioned.
In July there is no need for a pool to be heated in Provo. Pool temps seem to be in the 85 degree range at that time of year.
