From personal experience, the chef Ben at Mad Hatter's is very accommodating with gluten-free.
Look at Karsten's menu at Tribe Road Kitchen as well.

Years ago we were fortunate to attend the grand opening of a restaurant in Bermuda. What wasn't fortunate was a celiac who summoned the chef to her table to discuss what he could prepare for her. He was held hostage for over 15 minutes and her demands thru the whole evening off for the kitchen and the scrambling front of house.

Fourways and Ascots can accommodate a gluten free request.
