Here's a link to a site that talks about the Phillilps Square hotel, not 5 star but it's new;
click on what's new section

There are a few new boutique hotels in Old Montreal, the St.James and one more I think... Le Germain is not so new anymore but still favored........ Intercontinental and Vogue are excellent ones; our Ritz Carlton is pretty old....

I just got back form Montreal and we stayed at the Sofitel which opened on Oct 2002. I thought the hotel was great. It is centrally located and the rooms are large with all amenities. Service was excellent and everything is new and unspoiled. I highly reccommend this hotel.

Hi. We stayed at the Hotel St. Paul on McGill at the outskirts of Old Montreal--opening within the past year or so so is not listed in guidebooks. A happening place at night at the bar, is modern looking, room had CD player, refrigerator, safe, bathrobes, fluffy towels. Breakfast room on second floor is nice and sunny--fresh fruit, breads, boiled eggs, cheeses. Room service is expensive ($19 CAD for continental). Olive y Gourmade bakery (for great breakfast) and Boris Bistro (romantic patio with music), Blu (spa) are about a block away. Closest metro stop is about 3 blocks away--Square Victoria. We checked out Hotel Nelligan--much cosier (which we liked) for about the same price--$145 US for cheapest room. We booked a hotel-air package with Expedia so not quite sure of what we ended up paying just for the hotel portion.
