In Victoria consider, Camille's, Cafe Brio, Il Terrazzo, Blue Crab Bar & Grill, and L'ecole Brasserie
In Tofino, think about the Point Restaurant at the Wickaninish Inn and a little more casual, the Rain Forest Cafe,
Near Shawnigan Lake think about Steeples.
In Sooke, consider Sooke Harbour House.
Most require reservations especially on weekends.

We live in Sooke and agree with the suggestion about Sooke Harbour House; also in the area we would strongly recommend Markus' Wharfside Restaurant. It's fine dining, a little different from Sooke Harbour House but equally good in our opinion.
A little further west, maybe about a 20-minute drive along West Coast Road, you might enjoy Point No Point - gorgeous ocean views and wonderful food.

Bailey, I think you'll love Sooke! We've driven past Eagle Cove numerous times; it's not all that far from Point No Point. You might want to have a look at Point No Point's website as well - they have lovely cabins as well as a great restaurant, although I see that you've already booked your accommodations.
If you have a chance, check out the Tugwell Creek Honey Farm. It's not far from where you're staying. They sell several kinds of honey as well as mead, a dessert wine made from honey. You can watch the bees at work from a safe vantage point too, if that interests you.
