I recommend the following restaurant
Pilot house
Sims corner steakhouse and oyster bar
Sirenella
Off-Broadway
for more of a pub atmosphere:
merchantman man pub and the olde dublin pub.

We stayed at the Delta Prince Edward in July and it was fine. It's a standard Delta hotel -- little in the way of charm, but the rooms were big and the rates were good (we used the Entertainment Book). We were there for the Canada Day weekend so we wanted to be right on the harbour.
We LOVED the Prince Water Corner Shop and had a great lobster dinner there. It was a busy weekend so we stopped in earlier in the day and made a reservation. I'm not sure if you'd have to do that now.
We had a light lunch at the Merchantman and thought it was good but not exceptional in any way.

Thank you for your input. At this point, I think the 5 we're going to go to are: Sirenella, Merchantman, Lucy Maud, Selkirk, & the Water Prince Corner Restaurant. Please, correct me if we're wrong to settle on these five!

When are you going?
Do you have to actually pick the restaurants before you go. You might have a lot better luck once you actually see them to decide where to eat.
There are some amazing restaurants in PEI that arent in Charlottetown.

We're going in the 3rd or 4th week of June. We've already researched the rest of PEI. We'll be going to Delvay-by-the-Sea, Dunes, Inn at Bay Fortune, New Glasgow Lobster Supper, Fisherman's Wharf, & West Point Lighthouse. Summerside is undecided, however. O'Ryan's? P&T? Silver Fox? Brothers Two? Gentleman Jim's? Prince William? Summerside Motel? Blue Shank? Heritage? Lakeside ... Loyalist? (We're going to need 4 brunch locations & 3 supper ones.)
