For a family, I'd suggest renting a car and spending 2 days around Rotorua -- lots there to do: the geothermal stuff is awesome, several Maori cultural shows, and lots of other tourist activities. To explore New Zealand, take a bit more time -- one year would be a good start. Have a great vacation.
