Melbourne : Crown Towers or Langham Hotel ??

Both should be very good. It probably all comes down to how much you are prepared to pay. I never stayed in either so couldn't compare, say, a standard room in both.
Crown Towers is newer than the Langham so possibly more modern. Langham's have not long taken over the hotel (used to be a Sheraton) so they may have done a big refurbishmnet as part of the takeover but can't recall hearing about it. The location of both is good - very close to each other.

The Langham and Crown Towers are both great hotels - two of the best in Melbourne. They're actually quite similar but Crown is just that little bit newer, grander and more opulent. Their prices are similar and they are located near each other - Langham is just a tiny bit closer to the City if you're walking. As Shandy said, the Park Hyatt is often rated the best hotel in Melbourne but it's not that different to the other two. Location should be the deciding factor.
