Fodor's has quiet good free online guides to each of the cities in Australia. You might find this a useful place to start your research.

Casino, boating, kayaking, historic buildings (Salamanca Place), Bruny Island, great views from Mt Wellington, the market, Port Arthur, on the way to P.A. the Tasmanian Devils and Eaglehawk Neck (http://www.discovertasmania.com/hoba...eaglehawk_neck), good eating (http://blog.discovertasmania.com/?s=foodie)
It's not NYC but it will keep you happy for many days on end.

Hobart now has a replica of Douglas Mawson's hut, which is on the waterfront as is Salamanca, which was originally warehouses.

It is also home to MONA, a world class art gallery. There is ferry from the water front.

Hobart itself is well preserved and has lovely buildings and it a far nicer and scenic city than Sydney. And like Sydney it is right on the waterfront.

From Constituon Dock you can walk to Jackman & McRoss, a really good bakery at Battery Point which is a very cute part of Hobart. It feels a bit Irish.
