Just a couple of recommendations: make a reservation to take a tour of the Cadbury chocolate factory. Very interesting and fun, but tours book up quickly. On the weekend, check out the Salamanca market downtown - all sorts of fascinating booths, food, and entertainment. A visit to the Antarctic Experience Museum is a great way to spend a couple of hours. I would also take the drive onto the Tasman Peninsula for a tour of the Port Arthur historic site - one of the biggest of the original penal colonies (and the most visited site in Oz). The weather should be quite nice - late Spring/early summer; warm but perhaps a bit cool at night.

I was in Tassie that time last year and it was wonderful.
On Saturday start at the Salamanca Markets and also go to the Antarctic exhibition which is around the same area. You can get a pass to come out and then go back again if you want to. The markets are lovely and very colourful and we spent the whole day there as we also went to the Ant. exh. you can also get meals in and around that area so make a day of it.
Port Arthur is a must too for a day trip and then it will be a toss up whether to go down the Huon Valley for a drive - go to Richmond and up through the convict villages of Ross and Campelltown etc or driving up through New Norfolk and through to Mr Field National park, stopping at the Salmon Ponds en route etc. If its a nice day then a trip up MT Wellington and taking a look over and around Hobart is rather spectactular.
If you are looking for nice places to stay then may I suggest staying out of Hobart in Richmond and one of the lovely B&Bs or guesthouses there. Even the Pub has some good accommodation in what used to be the old stables - at a very good price. Prospect House in Richmond is lovely, The Mill House or Bridge House ( can't remember which name now) is also lovely. These will be on the Web under accommodation in Tasmania. In New Norfolk there is a wonderful place called 'Tynwald' which is very historic and beautiful - food is excellant too. There are a couple of very exclusive B&B's in Hobart which you could look up. You may as well make your stay a memorable one! Enjoy Tassie as you will go back again and again I am sure as its the biggest little Island in the world.

Hello again
I have just made a booking for myself for next February in Hobart and I have book the Woolstore apartments. It is very well located one street from the boat marina and where all the action is. Also I noted that there is a new hotel at Salamanca place - they too have apartments and they are having specials upto December 24th. For you that would be terrific as its the best possible spot. However I could not make a booking because I want one outside the special time - you may have better luck. Both were very reasonably priced and both well situated, although the Salamanca one is the better I feel.
Port Arthur and local area is a must. A drive up to the Freycinet Peninsula is also highly recommended.

Anil:
We stayed at the Grand Chancellor Hotel. Right on the wharf in the midst of many fine restaurants and within walking distance of the Salamanca Market. I believe they have a web site.
As I recall we paid Aus$100 per night for my wife and I. Were there one year ago today. Lovely place, Tasmania.
John
