The Maglev train goes to the Longyang road metro station, which is about halfway between Pudong Airport and central Shanghai, still on the east side of the river.
From there, you can switch to the subway, or take a taxi.
Don't know how far the subway stop is from Shanghai Centre.

the train is fine. But it terminates in a relatively remote area where you either have to get a taxi anyway or herd your kids and luggage onto the metro system.

The train does run every twenty minutes, but, if I remember it ran from 9 to 7. Most international flights from the US arrive later than that, so even when I lived in Shanghai, I rarely had the opportunity to use it.

If you do take a taxi, tell the driver that you're going to the "Port-o-mon". The Shanghai Center is in the same complex as the Portman Ritz Carlton hotel and the drivers know it as the Portman. The taxi stop is the same. The doormen speak english so they can point you in the right direction.
I would take a taxi (stay away from burgundy and dark blue taxis and use the meter), but if you take the Metro from the Maglev you want Metro Line 2 - which I think is your only choice - and get off at Nanjing Xi (West) Road station. I'm not sure exactly where the station is but I know you want to be between the People's Square and JingAn Temple stations on that line. Shanghai Center is on Nanjing Xi (West) Road.

Element Fresh is a good western restaurant in that complex. HSBC ATM is in the complex too. Let me know if you want any specific info about that area as I go there a few times a week.

You need to have the name of your destination written in Chinese before you board a taxi at the airport or a the Maglev train station. I found it on my hotel's web site and cut and paste it to print it out before leaving home. You also need to stop in the airport and get some Chinese money.
I would make my maglev vs. taxi decision based on the age of your children and amount of luggage. I had a bag with wheels and a carry on, so getting on the Maglev was easy and an enjoyable ride. A line of taxis at the station made getting to my hotel very easy. When I left Shanghai, I had a lot more stuff with me, so I opted for a taxi to the airport and had the worst ride ever, even if it only cost $20 or more.

From Pudong, I'm going to the Astor House Hotel. Taxi or Maglev train???? I'll be by myself (woman alone), meeting people at the hotel. Is the $20 rate still about right, if you recommend taxi?

Taxi or Maglev depends on whether or not you're interested in the experience of riding on a maglev. I'd think it could be faster too depending on where you're going, especially at rush hour. Cost will be less if you take the metro from the maglev terminus. Only take taxi's from the queue at airport or maglev - never from touts or "airport information". Airport queue is out the terminal doors and turn right. The coordinator there will tell taxi driver where you're going but it's best to bring the name of the hotel in chinese which are usually provided on hotel websites. Lots of threads on this.
If you take the Maglev train you'll have to take a taxi or metro to your hotel as you're still quite far away.
I'd still estimate $20 as top end for a taxi from airport to Astor House hotel because I'd say it's a shorter ride than to Shanghai Center due to how the roads are set up.
There's a Citibank ATM after you clear immigration but before you take escalator to go to baggage claim. There are currency exchanges after you exit the baggage claim but I don't think any are inside there. I never checked as I always use ATMs. See other threads on getting currency in Shanghai/China too.
