We are booking the train from Hanoi to Hue but what caught my attention is you experience with the train from Bangkok to Chaing Mai. I was debating this or flying...we would take the overnight train but it still has plenty of daylight. I would like to read more about your views on this. Thanks!!

Are you really sure that you want to take a train? Bear in mind that trains in Southest Asia are not a luxury transportation. At least, if you compare to Japan or Europe standards. So, if you are adventurer and an easy going person, go head. It may be fun to you. Otherwise, stay out of it.

Not sure why the Sapa train gets such a bad rap. Besides the rattling of the train, we were able to sleep soundly and enjoyed the train. Afraid I can't speak about the other trains.
