Seoul, Korea Accommodation / Restaurants
Suggestions for "central" accommodation location near to the things to do and potentially some green space. Mid range budget - just coming back from 40 days in Australia/New Zealand!
Also any restaurant recommendations?

The area around Gwanghwamun is pretty central to things. There are also a bunch of dining options in the area. Not sure what you are looking for in restaurants but I could probably offer a suggestion or two. Unfortunately I am not a fan of Korean food so I would probably steer you toward Indian, Mexican or just about anything else. I can consult with a few people for a better variety or "good" K-food.

We stayed at the Ramada Inn and Suites near City Hall.
The airport limo goes straight there.
If your husband cannot handle spices very well, I recommend this restaurant. The one we ordered is not spicy at all.

Otherwise, Insadong (the "traditional" Korean culture street) is very close to the Gwanghwamun/City Hall/Myungdong area and you have many options for Korean restaurants there, including the ones where they bring you around 30 dishes - the hanjungshik - course-style traditional food.
